Hot Honey Cornbread

Instructions
- Preheat the oven to 400°F and set a rack in the middle.
- In a microwave-safe bowl, melt 4 tablespoons of butter with honey and red pepper flakes in 30-second increments until simmering.
- In a separate bowl, combine cornmeal, flour, salt, and baking powder.
- Melt the remaining butter in a cast iron skillet, adding most of it to a large bowl while leaving some in the skillet.
- Mix sour cream into the melted butter in the bowl, then add the eggs and mix thoroughly.
- Fold the dry ingredients into the wet ingredients until a batter forms.
- Swirl the skillet to coat with remaining butter and pour in the batter.
- Bake for 25 to 30 minutes until a thermometer reads 190°F or a toothpick comes out with a little moisture.
- Spread the hot honey butter over the top of the cornbread before serving.
