Hot Honey Cornbread

Ingredients

  • 12 Tbsp butter, divided
  • 1 cup honey
  • ¼ tsp red pepper flakes
  • 2 eggs eggs
  • 1 ¼ cup sour cream
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 ½ tsp salt
  • 2 tsp baking powder

Instructions

  1. Preheat the oven to 400°F and set a rack in the middle.
  2. In a microwave-safe bowl, melt 4 tablespoons of butter with honey and red pepper flakes in 30-second increments until simmering.
  3. In a separate bowl, combine cornmeal, flour, salt, and baking powder.
  4. Melt the remaining butter in a cast iron skillet, adding most of it to a large bowl while leaving some in the skillet.
  5. Mix sour cream into the melted butter in the bowl, then add the eggs and mix thoroughly.
  6. Fold the dry ingredients into the wet ingredients until a batter forms.
  7. Swirl the skillet to coat with remaining butter and pour in the batter.
  8. Bake for 25 to 30 minutes until a thermometer reads 190°F or a toothpick comes out with a little moisture.
  9. Spread the hot honey butter over the top of the cornbread before serving.
