Garlic Pesto Smashed Potatoes

Ingredients

The potatoes

  • lbs. baby yellow potatoes

The pesto and seasoning

  • 3 tablespoons olive oil
  • to taste salt
  • to taste ground black pepper
  • to taste chopped parsley
  • as needed garlic pesto

Instructions

  1. 1. Boil a pot of water and add the potatoes, cooking for 15 minutes.
  2. 2. Drain the potatoes and let them cool.
  3. 3. Prepare the garlic pesto.
  4. 4. Preheat the oven to 400°F (207°C).
  5. 5. Transfer the potatoes to a baking sheet lined with parchment paper.
  6. 6. Smash the potatoes gently with the bottom of a small saucepan.
  7. 7. Brush olive oil on the smashed potatoes and sprinkle with salt and pepper.
  8. 8. Bake in the oven until golden brown, about 15-20 minutes.
  9. 9. Brush the garlic pesto on top of the smashed potatoes and sprinkle with chopped parsley before serving.
