Garlic Pesto Smashed Potatoes

The potatoes

The pesto and seasoning

Instructions
- 1. Boil a pot of water and add the potatoes, cooking for 15 minutes.
- 2. Drain the potatoes and let them cool.
- 3. Prepare the garlic pesto.
- 4. Preheat the oven to 400°F (207°C).
- 5. Transfer the potatoes to a baking sheet lined with parchment paper.
- 6. Smash the potatoes gently with the bottom of a small saucepan.
- 7. Brush olive oil on the smashed potatoes and sprinkle with salt and pepper.
- 8. Bake in the oven until golden brown, about 15-20 minutes.
- 9. Brush the garlic pesto on top of the smashed potatoes and sprinkle with chopped parsley before serving.
