Roasted Smashed Garlic Potatoes

Instructions
- 1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
- 2. Place the potatoes in a pot filled with water, add salt, and bring to a boil. Reduce heat and simmer for 18-20 minutes.
- 3. Drain the potatoes and let them cool for 3-5 minutes.
- 4. Smash each potato with a spatula until the skin bursts.
- 5. Drizzle one tablespoon of olive oil over the smashed potatoes and sprinkle with salt.
- 6. Flip the potatoes, drizzle with the remaining olive oil, and sprinkle with more salt.
- 7. Bake for 15 minutes, then flip the potatoes, add minced garlic, and bake for another 15-20 minutes.
- 8. Remove from the oven and sprinkle with parsley before serving.
