Roasted Smashed Garlic Potatoes

Ingredients

The potatoes

  • 1 ½ lbs baby potatoes

The seasoning

  • 2 tablespoons olive oil
  • to taste coarsely ground sea salt
  • 1 teaspoon minced garlic
  • to taste dried parsley flakes

Instructions

  1. 1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. 2. Place the potatoes in a pot filled with water, add salt, and bring to a boil. Reduce heat and simmer for 18-20 minutes.
  3. 3. Drain the potatoes and let them cool for 3-5 minutes.
  4. 4. Smash each potato with a spatula until the skin bursts.
  5. 5. Drizzle one tablespoon of olive oil over the smashed potatoes and sprinkle with salt.
  6. 6. Flip the potatoes, drizzle with the remaining olive oil, and sprinkle with more salt.
  7. 7. Bake for 15 minutes, then flip the potatoes, add minced garlic, and bake for another 15-20 minutes.
  8. 8. Remove from the oven and sprinkle with parsley before serving.
