Garlic Parmesan Smashed Potatoes

Ingredients

The potatoes

  • 1 lb baby gold or red potatoes

The seasoning

  • 3 tbsp butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp parsley, chopped fine
  • 1 tsp salt
  • ½ tsp pepper
  • cup shredded parmesan cheese

Instructions

  1. Fill a large pot halfway with water and a few pinches of salt, then bring to a boil.
  2. Once boiling, add the potatoes and cook for 25-30 minutes or until fork-tender.
  3. Drain the potatoes and let them cool slightly.
  4. While cooling, mix together the softened butter, garlic, parsley, salt, and pepper.
  5. Turn the oven on to broil at 550°F.
  6. Place the potatoes on a parchment-lined baking sheet and use the back of a glass to smash each potato.
  7. Brush each smashed potato with the butter mixture and broil in the oven for 10 minutes, moving the tray if necessary for even cooking.
  8. Remove the potatoes from the oven and sprinkle parmesan cheese on top, then broil for an additional 4-5 minutes.
