Garlic Parmesan Smashed Potatoes

baby gold or red potatoes
The seasoning

butter, softened

parsley, chopped fine

shredded parmesan cheese
Instructions
- Fill a large pot halfway with water and a few pinches of salt, then bring to a boil.
- Once boiling, add the potatoes and cook for 25-30 minutes or until fork-tender.
- Drain the potatoes and let them cool slightly.
- While cooling, mix together the softened butter, garlic, parsley, salt, and pepper.
- Turn the oven on to broil at 550°F.
- Place the potatoes on a parchment-lined baking sheet and use the back of a glass to smash each potato.
- Brush each smashed potato with the butter mixture and broil in the oven for 10 minutes, moving the tray if necessary for even cooking.
- Remove the potatoes from the oven and sprinkle parmesan cheese on top, then broil for an additional 4-5 minutes.
