Garlic Smashed Potatoes

Ingredients

The potatoes

  • pounds red potatoes

The sauce

  • ¼ cup olive oil
  • 3 cloves garlic, mashed
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Optional balsamic drizzle

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons fresh parsley, chopped
  • ½ teaspoon salt

Instructions

  1. Boil water in a large pot.
  2. Add the potatoes and boil for 15-16 minutes until fork tender.
  3. While boiling, prepare the sauce by whisking together olive oil, mashed garlic, garlic powder, smoked paprika, onion powder, rosemary, thyme, salt, and pepper.
  4. Test the potatoes for doneness, and drain the water when done.
  5. Preheat the oven to 450°F.
  6. Rub olive oil on a baking sheet and line up the potatoes.
  7. Smash each potato to about ¼ - ½ inch thick.
  8. Coat the smashed potatoes with the prepared sauce mixture.
  9. Bake for 30-35 minutes until crispy.
  10. If making the balsamic drizzle, whisk together the ingredients and drizzle over baked potatoes.
