Garlic Smashed Potatoes

Optional balsamic drizzle

Instructions
- Boil water in a large pot.
- Add the potatoes and boil for 15-16 minutes until fork tender.
- While boiling, prepare the sauce by whisking together olive oil, mashed garlic, garlic powder, smoked paprika, onion powder, rosemary, thyme, salt, and pepper.
- Test the potatoes for doneness, and drain the water when done.
- Preheat the oven to 450°F.
- Rub olive oil on a baking sheet and line up the potatoes.
- Smash each potato to about ¼ - ½ inch thick.
- Coat the smashed potatoes with the prepared sauce mixture.
- Bake for 30-35 minutes until crispy.
- If making the balsamic drizzle, whisk together the ingredients and drizzle over baked potatoes.
