Garlic Parmesan Smashed Potatoes

Ingredients

The potatoes

  • 2 lbs baby potatoes
  • 1 teaspoon salt
  • ¼ cup shredded Parmesan cheese

The garlic butter

  • ¾ stick unsalted butter, melted
  • 5 cloves garlic, minced
  • 2 tablespoons chopped parsley

The cooking water

  • to taste water, for boiling

Instructions

  1. 1. Preheat the oven to 400°F (207°C).
  2. 2. Bring a pot of water to a boil and add salt.
  3. 3. Boil the baby potatoes for 10 minutes, then drain and set aside.
  4. 4. In a bowl, combine the melted butter, salt, garlic, and chopped parsley.
  5. 5. Arrange the boiled potatoes on a baking sheet and gently flatten each potato.
  6. 6. Brush the garlic butter mixture over the top of each potato and sprinkle with Parmesan cheese.
  7. 7. Bake for 20 minutes until the edges are crispy and golden brown.
  8. 8. Remove from the oven and serve immediately.
