Ingredients

The potatoes

  • 1 pound baby potatoes (such as red potatoes or Yukon Gold)

The seasoning and toppings

  • 4 tablespoons butter (melted)
  • 1 ½ teaspoons garlic (minced)
  • ½ teaspoon Italian seasoning
  • ¼ cup parmesan cheese (finely grated)
  • to taste salt
  • to taste black pepper
  • 2 tablespoons fresh parsley (chopped)
  • as needed cooking spray

Instructions

  1. 1. Boil baby potatoes in salted water until tender, about 18-22 minutes.
  2. 2. Preheat the oven to 425°F and coat a sheet pan with cooking spray.
  3. 3. Drain the potatoes and place them on the pan in a single layer.
  4. 4. Use a glass or potato masher to carefully flatten each potato.
  5. 5. In a bowl, combine melted butter, minced garlic, Italian seasoning, salt, and pepper.
  6. 6. Drizzle the butter mixture over each potato and sprinkle with parmesan cheese.
  7. 7. Bake for 20-25 minutes until the potatoes are golden brown and crispy.
  8. 8. Sprinkle with chopped parsley before serving.
