Smashed Potatoes with Garlic and Herbs

Instructions
- 1. Boil baby potatoes in salted water until tender, about 18-22 minutes.
- 2. Preheat the oven to 425°F and coat a sheet pan with cooking spray.
- 3. Drain the potatoes and place them on the pan in a single layer.
- 4. Use a glass or potato masher to carefully flatten each potato.
- 5. In a bowl, combine melted butter, minced garlic, Italian seasoning, salt, and pepper.
- 6. Drizzle the butter mixture over each potato and sprinkle with parmesan cheese.
- 7. Bake for 20-25 minutes until the potatoes are golden brown and crispy.
- 8. Sprinkle with chopped parsley before serving.
