Instructions
- Preheat the oven to 425 degrees.
- Boil the potatoes in a large pot of water until fork-tender.
- Transfer the cooked potatoes to 2 baking sheets and smash each potato gently to about ½ inch thick.
- In a small bowl, mix the salt and onion powder.
- Drizzle olive oil over the potatoes and sprinkle half of the salt mixture on top.
- Break apart the rosemary and sprinkle it over the potatoes.
- Bake the potatoes for 10 minutes on each side, sprinkling the remaining salt mixture when flipping.
- Transfer the roasted potatoes to a serving dish and sprinkle with chopped scallions before serving warm.
