Smashed Potatoes

Ingredients

The potatoes

  • 2 lbs small red or white potatoes

The seasoning

  • 2 tbs olive oil
  • ½ tsp salt
  • tsp onion powder
  • 2 sprigs rosemary
  • 2 scallions chopped

Instructions

  1. Preheat the oven to 425 degrees.
  2. Boil the potatoes in a large pot of water until fork-tender.
  3. Transfer the cooked potatoes to 2 baking sheets and smash each potato gently to about ½ inch thick.
  4. In a small bowl, mix the salt and onion powder.
  5. Drizzle olive oil over the potatoes and sprinkle half of the salt mixture on top.
  6. Break apart the rosemary and sprinkle it over the potatoes.
  7. Bake the potatoes for 10 minutes on each side, sprinkling the remaining salt mixture when flipping.
  8. Transfer the roasted potatoes to a serving dish and sprinkle with chopped scallions before serving warm.
