Instructions
- Prepare flax eggs by mixing ground flaxseed with warm water and let it sit for 10 minutes.
- Chop chickpeas, carrots, celery, and cauliflower in a food processor until chunky, then transfer to a large bowl.
- Add chopped green onions to the bowl.
- In the bowl, mix in oats, almond flour, flax eggs, and buffalo sauce until well combined.
- Let the mixture sit to allow the oats to soak up some liquid for better consistency.
- Shape the mixture into 4-inch patties.
- Cook the patties on medium heat in a covered pan for 4-5 minutes on each side until slightly browned.
- Allow the burgers to cool slightly before serving on buns or lettuce wraps with your choice of toppings.
