Ingredients

The burger mixture

  • 2 flax eggs flaxseed (2 tablespoons ground flaxseed plus 6 tablespoons water)
  • 3 cans chickpeas (15 ounces each)
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped cauliflower
  • ½ cup chopped green onions
  • 1 cup oats (gluten free if needed)
  • 1 cup almond flour
  • ¾ cup buffalo cayenne pepper type hot sauce

Suggested toppings

  • to taste burger buns or lettuce wraps
  • to taste Pistachio Buffalo Cream
  • to taste lettuce
  • to taste tomato
  • to taste red onion

Instructions

  1. Prepare flax eggs by mixing ground flaxseed with warm water and let it sit for 10 minutes.
  2. Chop chickpeas, carrots, celery, and cauliflower in a food processor until chunky, then transfer to a large bowl.
  3. Add chopped green onions to the bowl.
  4. In the bowl, mix in oats, almond flour, flax eggs, and buffalo sauce until well combined.
  5. Let the mixture sit to allow the oats to soak up some liquid for better consistency.
  6. Shape the mixture into 4-inch patties.
  7. Cook the patties on medium heat in a covered pan for 4-5 minutes on each side until slightly browned.
  8. Allow the burgers to cool slightly before serving on buns or lettuce wraps with your choice of toppings.
