Ingredients

  • 2 steaks Filet Mignon (8-ounce each)
  • 2 tablespoons cooking oil (Olive or Canola)
  • 3-4 tablespoons butter
  • 3-4 sprigs rosemary (optional)
  • to taste salt
  • to taste freshly ground pepper
  • to garnish fresh chopped parsley
  • to taste garlic butter

Instructions

  1. Season the filet mignon steaks with salt and pepper on both sides and set aside.
  2. Heat oil in a cast-iron skillet over high heat until it starts to smoke.
  3. Sear the steaks for 1-2 minutes on each side until browned and crusted.
  4. Reduce heat, add butter and rosemary, and cook for an additional 7-10 minutes, basting with butter.
  5. Check the internal temperature for desired doneness using a thermometer.
  6. Pour remaining juices and butter over the steaks before serving and top with garlic butter if desired.
