Perfect Filet Mignon with Herb Butter

Instructions
- Season the filet mignon steaks with salt and pepper on both sides and set aside.
- Heat oil in a cast-iron skillet over high heat until it starts to smoke.
- Sear the steaks for 1-2 minutes on each side until browned and crusted.
- Reduce heat, add butter and rosemary, and cook for an additional 7-10 minutes, basting with butter.
- Check the internal temperature for desired doneness using a thermometer.
- Pour remaining juices and butter over the steaks before serving and top with garlic butter if desired.
