Ingredients

The steak

  • 6 pieces Filet mignon (6-8 ounces each)

The seasoning and cooking

  • ½ teaspoon Kosher salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Oil (canola, avocado, or vegetable)
  • tablespoons Butter
  • 6 cloves Garlic (crushed)
  • 4 sprigs Rosemary (fresh)
  • 2 sprigs Thyme (fresh)

Instructions

  1. 1. Season the steaks with salt and pepper and let them sit at room temperature for 30 minutes.
  2. 2. Preheat the oven to 200°C (400°F). Heat a cast iron skillet over high heat for 3 minutes.
  3. 3. Add oil, butter, rosemary, thyme, and crushed garlic to the skillet. Cook for 2 minutes until the butter infuses with the herbs.
  4. 4. Add the steaks to the pan and sear for 3 minutes on each side.
  5. 5. After searing, place the skillet in the oven for an additional 6 minutes of cooking.
  6. 6. Let the steaks rest at room temperature for 5 minutes before serving with pan juices and flaky salt.
