Instructions
- 1. Season the steaks with salt and pepper and let them sit at room temperature for 30 minutes.
- 2. Preheat the oven to 200°C (400°F). Heat a cast iron skillet over high heat for 3 minutes.
- 3. Add oil, butter, rosemary, thyme, and crushed garlic to the skillet. Cook for 2 minutes until the butter infuses with the herbs.
- 4. Add the steaks to the pan and sear for 3 minutes on each side.
- 5. After searing, place the skillet in the oven for an additional 6 minutes of cooking.
- 6. Let the steaks rest at room temperature for 5 minutes before serving with pan juices and flaky salt.
