Instructions
- Tie each filet around the sides with kitchen twine to maintain its shape.
- Season the filets generously with kosher salt and black pepper, then let them sit at room temperature.
- Prepare the grill for indirect cooking at 250°F.
- Once the grill is stable at temperature, place the filets in the center and cook until they reach an internal temperature of 125°F.
- Remove the filets and let them rest while preparing for direct grilling.
- Build a hot fire on the grill for about 5 to 10 minutes.
- Sear each steak on the grill for 1 to 1½ minutes per side to create a crust.
- Remove the steaks from the grill and serve.
