Ingredients

The steak

  • 2 steaks filet mignon

The seasoning

  • to taste kosher salt
  • to taste fresh ground black pepper

Tools

  • 1 piece kitchen twine
  • 1 piece tongs
  • 1 piece Thermapen or preferred meat thermometer

Instructions

  1. Tie each filet around the sides with kitchen twine to maintain its shape.
  2. Season the filets generously with kosher salt and black pepper, then let them sit at room temperature.
  3. Prepare the grill for indirect cooking at 250°F.
  4. Once the grill is stable at temperature, place the filets in the center and cook until they reach an internal temperature of 125°F.
  5. Remove the filets and let them rest while preparing for direct grilling.
  6. Build a hot fire on the grill for about 5 to 10 minutes.
  7. Sear each steak on the grill for 1 to 1½ minutes per side to create a crust.
  8. Remove the steaks from the grill and serve.
