Ingredients

The steak

  • 4 steaks filet mignon (4-6 ounces each)

The cooking essentials

  • tablespoons neutral flavored oil (such as safflower, canola, grapeseed, or peanut oil)

The flavorings

  • 4 tablespoons butter
  • 4 cloves garlic (smashed)
  • 4 sprigs fresh rosemary

Instructions

  1. Let the steaks sit at room temperature for 20 minutes.
  2. Preheat the oven to 450 degrees F.
  3. Season the steaks on both sides with salt and pepper.
  4. Heat a heavy pan over high heat and add the oil.
  5. Place the steaks in the pan in a single layer and cook for 2-3 minutes per side until browned.
  6. Add the butter to the pan, then add the garlic and rosemary after the butter melts.
  7. Spoon the butter mixture over the steaks.
  8. Insert a thermometer into the thickest part of one steak and place the pan in the oven.
  9. Bake for 5-7 minutes until the thermometer registers 140 degrees F for medium.
  10. Remove the pan from the oven and let the steak rest for 5 minutes before serving.
