Instructions
- Let the steaks rest at room temperature for 1 hour to remove the chill.
- Preheat the oven to 250°F and prepare a baking sheet with a wire cooling rack.
- Dab the steaks dry with paper towels and season both sides with salt and pepper.
- Place the steaks on the rack, insert a meat thermometer into one steak, and bake until a few degrees shy of the target temperature, about 40 to 65 minutes.
- Preheat a cast iron skillet over moderately high heat for 5 to 10 minutes until it smokes.
- Add 1 Tbsp of light olive oil to the skillet and swirl to coat the bottom.
- Sear the steaks for about 45 to 60 seconds on one side, then turn and sear the opposite side for another 45 to 60 seconds.
- Serve warm with a sauce of your choice or simply with melted butter.
