Filet Mignon

Ingredients

The steak

  • 4 pieces filet mignon steaks (8 oz each)

The seasoning

  • to taste none Kosher salt
  • to taste none Fresh cracked black pepper
  • 1 Tbsp light olive oil or vegetable oil

Instructions

  1. Let the steaks rest at room temperature for 1 hour to remove the chill.
  2. Preheat the oven to 250°F and prepare a baking sheet with a wire cooling rack.
  3. Dab the steaks dry with paper towels and season both sides with salt and pepper.
  4. Place the steaks on the rack, insert a meat thermometer into one steak, and bake until a few degrees shy of the target temperature, about 40 to 65 minutes.
  5. Preheat a cast iron skillet over moderately high heat for 5 to 10 minutes until it smokes.
  6. Add 1 Tbsp of light olive oil to the skillet and swirl to coat the bottom.
  7. Sear the steaks for about 45 to 60 seconds on one side, then turn and sear the opposite side for another 45 to 60 seconds.
  8. Serve warm with a sauce of your choice or simply with melted butter.
