Ingredients

The Steaks

  • 2 steaks filet mignon

The Seasoning

  • to taste kosher salt
  • to taste fresh ground black pepper

Tools

  • 1 kitchen twine
  • 1 tongs
  • 1 thermapen or preferred meat thermometer

Instructions

  1. Tie each filet with twine to maintain its shape and season with salt and pepper.
  2. Let the seasoned filets sit at room temperature while preparing the grill.
  3. Set up the grill for indirect cooking at 250°F.
  4. Once stabilized, place the filets on the grill and cook until they reach an internal temperature of 125°F.
  5. Remove the filets and let them rest while preparing for direct grilling.
  6. Remove the ConvEGGtor and switch to direct grilling, allowing the grill to heat for 5 to 10 minutes.
  7. Sear each steak for 1 to 1½ minutes on each side to create a char.
  8. Remove the steaks and serve them pink from edge to edge.
