Instructions
- Bring the steaks to room temperature and pat them dry, then season with salt and pepper.
- Prepare the compound butter if using and keep it refrigerated until serving.

- Reduce the heat to medium-low and continue grilling until the desired doneness is reached.
- Transfer the steaks to a cutting board, top with compound butter if using, and let them rest for 10 minutes before slicing.
