Instructions
- Preheat the oven to 375°F.
- In a large bowl, mix together the pumpkin, vanilla, egg, maple syrup, and milk.
- Add the oats, cinnamon, pecans, nutmeg, and salt to the mixture.
- Pour the mixture into an 8x8 baking dish and garnish the top with extra pecans.
- Bake for 20 minutes or until set and firm.
- Drizzle with extra maple syrup if desired.
