Ingredients

  • 3 cups Old Fashioned Oats
  • 1/3 cup Chopped Pecans
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Salt
  • 1 tsp Vanilla
  • 1/3 cup Pumpkin
  • 1 large Egg
  • 1.5 cups Almond Milk or milk of your choice
  • 1/4 cup Maple Syrup

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix together the pumpkin, vanilla, egg, maple syrup, and milk.
  3. Add the oats, cinnamon, pecans, nutmeg, and salt to the mixture.
  4. Pour the mixture into an 8x8 baking dish and garnish the top with extra pecans.
  5. Bake for 20 minutes or until set and firm.
  6. Drizzle with extra maple syrup if desired.
