Instructions
- Puree the sweet potatoes in a food processor and squeeze out excess moisture.
- In a bowl, combine the shredded sweet potatoes with sautéed onion, sautéed garlic, tapioca flour, guar gum, and Herbamare seasoning.
- If desired, add the egg to the mixture.
- Heat coconut oil in a pan over medium heat.
- Form small patties and cook in the pan for about 3 minutes on each side until golden brown.
