Sweet Potato Latkes

Ingredients

The latkes

  • 2 large sweet potatoes
  • ½ medium onion
  • ½ clove garlic
  • ¼ cup tapioca flour
  • 1 tsp guar gum
  • ¾ tsp Herbamare seasoning
  • 1 optional egg

For cooking

  • as needed tsp coconut oil

Instructions

  1. Puree the sweet potatoes in a food processor and squeeze out excess moisture.
  2. In a bowl, combine the shredded sweet potatoes with sautéed onion, sautéed garlic, tapioca flour, guar gum, and Herbamare seasoning.
  3. If desired, add the egg to the mixture.
  4. Heat coconut oil in a pan over medium heat.
  5. Form small patties and cook in the pan for about 3 minutes on each side until golden brown.
