Instructions
- Combine grated carrots, chopped scallions, and whisked eggs in a large bowl.
- Stir in the salt and coconut flour until well mixed.
- Heat olive oil in a 9-inch skillet over medium heat.
- Scoop large tablespoonfuls of the batter onto the skillet.
- Fry the patties on each side until browned and crispy.
- Transfer the latkes to a paper towel-lined plate to drain excess oil.
- Repeat the frying process with the remaining batter.
- Serve the latkes with applesauce and sour cream or yogurt.
