Ingredients

  • 1 lb carrots
  • ½ cup pecans, finely diced
  • 2 pieces scallions, diced
  • 3 pieces eggs
  • ½ cup gluten-free flour
  • ½ tsp salt
  • ¼ cup avocado oil

Instructions

  1. Grate the carrots and place them in a large bowl.
  2. Add the diced pecans and scallions to the carrots and stir to combine.
  3. In a medium bowl, whisk the eggs and then mix in the flour and salt.
  4. Add the egg mixture to the carrot mixture and stir gently to combine.
  5. Heat the avocado oil in a large skillet over medium heat.
  6. Form the carrot mixture into ¼ cup patties and cook for 3 minutes on each side.
  7. Repeat until all the fritters are made.
