Instructions
- Prepare the cashew cream by blending all ingredients in a food processor until creamy, adding more water if needed.
- In a large bowl, mix shredded carrots, cilantro, chickpea flour, onion, cumin, and salt. Add eggs and water, and stir until combined.
- Heat coconut oil in a skillet over medium-high heat. Scoop fritter mixture into the pan in ¼-cup portions and flatten slightly.
- Cook for about 3 minutes on each side until golden brown.
- Serve fritters with cashew cream and additional cilantro.
