Ingredients

Cashew Cream

  • 1 cup raw cashews
  • ½ cup water
  • ¼ cup fresh lime juice
  • 1 clove garlic
  • 1 teaspoon ground cumin
  • ½ teaspoon fine sea salt

Fritters

  • 2 cups shredded carrots
  • 1 cup cilantro
  • ½ cup chickpea flour
  • ½ cup diced red onion
  • ½ teaspoon ground cumin
  • ½ teaspoon fine sea salt
  • 2 eggs lightly beaten
  • 2 tablespoons water
  • 2 tablespoons coconut oil

Instructions

  1. Prepare the cashew cream by blending all ingredients in a food processor until creamy, adding more water if needed.
  2. In a large bowl, mix shredded carrots, cilantro, chickpea flour, onion, cumin, and salt. Add eggs and water, and stir until combined.
  3. Heat coconut oil in a skillet over medium-high heat. Scoop fritter mixture into the pan in ¼-cup portions and flatten slightly.
  4. Cook for about 3 minutes on each side until golden brown.
  5. Serve fritters with cashew cream and additional cilantro.
