Carrot and Zucchini Fritters

Instructions
- Grate the carrots and zucchini, and combine them in a large bowl with the diced walnuts and onion.
- In a separate bowl, whisk together the eggs, flour, and salt, then add this mixture to the vegetables and stir well.
- Heat the avocado oil in a large skillet over medium heat.
- Form the mixture into patties using about 3 tablespoons of batter for each.
- Cook the patties for about 3 minutes on each side until golden brown.
- Repeat the process until all the fritters are cooked.
