Ingredients

  • ½ lb carrots, grated
  • ½ lb zucchini, grated
  • ½ cup walnuts, finely diced
  • 2 tbs diced onion
  • 3 eggs
  • ¾ cup gluten-free flour
  • ½ tsp salt
  • 3 tbs olive oil or avocado oil

Instructions

  1. Grate the carrots and zucchini, and combine them in a large bowl with the diced walnuts and onion.
  2. In a separate bowl, whisk together the eggs, flour, and salt, then add this mixture to the vegetables and stir well.
  3. Heat the avocado oil in a large skillet over medium heat.
  4. Form the mixture into patties using about 3 tablespoons of batter for each.
  5. Cook the patties for about 3 minutes on each side until golden brown.
  6. Repeat the process until all the fritters are cooked.
