Instructions
- In a medium bowl, combine the grated carrots, flour, cilantro, diced onion, cumin, salt, and cayenne pepper.
- Mix in the eggs and water until well combined.
- Heat olive oil in a large skillet over medium-low heat.
- Spoon the carrot mixture into the pan in ¼ cup sized patties and gently flatten them.
- Cook the fritters until golden brown, about 3 to 4 minutes per side.
- In a small bowl, combine yogurt, lime juice, and honey for the sauce.
- Serve the fritters warm with the yogurt sauce on top.
