Ingredients

The batter

  • 2 small bananas, mashed
  • 2 large eggs
  • 1 ¼ cups crushed pineapple

Instructions

  1. Mash the bananas in a bowl.

  3. Add the mashed bananas, crushed pineapple, gluten free flour, and salt to the eggs and stir to combine.
  4. Heat avocado oil in a skillet over medium heat.
  5. Drop the batter into the skillet in 2 to 3 tablespoon portions.
  6. Cook the fritters until lightly browned (2 to 3 minutes), then flip and cook for another 2 minutes.
  7. Remove the fritters to an oven-safe dish to keep warm while cooking the remaining batter.
  8. Serve warm.
