Instructions
- Mash the bananas in a bowl.
- Whisk the eggs in a large bowl.
- Add the mashed bananas, crushed pineapple, gluten free flour, and salt to the eggs and stir to combine.
- Heat avocado oil in a skillet over medium heat.
- Drop the batter into the skillet in 2 to 3 tablespoon portions.
- Cook the fritters until lightly browned (2 to 3 minutes), then flip and cook for another 2 minutes.
- Remove the fritters to an oven-safe dish to keep warm while cooking the remaining batter.
- Serve warm.
