Ingredients

The batter

  • 3 medium very ripe bananas
  • 2 tbsp sugar
  • 2 large eggs, beaten
  • 3 tbsp flour
  • ½ tsp vanilla extract
  • 1 tsp powdered sugar
  • ½ tsp cinnamon

For cooking

  • as needed buttered flavored Pam

Instructions

  1. 1. Mash the bananas in a bowl.
  2. 2. Add sugar, eggs, flour, and vanilla to the mashed bananas and mix well.
  3. 3. Heat a large skillet over low flame.
  4. 4. Spray the skillet with Pam when hot.
  5. 5. Pour 1 tablespoon of batter for each fritter into the skillet.
  6. 6. Cook for 1-2 minutes on one side, then flip and cook the other side.
  7. 7. Set the cooked fritters aside in a dish and keep warm in the oven.
  8. 8. Repeat with the remaining batter.
  9. 9. Serve 4 fritters on a plate, topped with powdered sugar and cinnamon.
