Ingredients

The batter

  • 4 large ripe bananas
  • ¾ cup whole wheat flour
  • ¾-1 cup all-purpose flour
  • 2-4 tablespoons brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon nutmeg
  • ½ teaspoon vanilla extract

For frying

  • oil for deep frying
  • optional confectioners sugar

Instructions

  1. Mash the bananas using a fork or puree them in a food processor.
  2. In a medium bowl, mix the mashed bananas with whole wheat flour, all-purpose flour, brown sugar, baking powder, and salt until you achieve a creamy batter.
  3. Add nutmeg and vanilla extract to the batter and let it rest for 10 minutes.
  4. Heat about ½ inch of oil in a large skillet over medium-high heat until shimmering but not smoking.
  5. Scoop the batter and fry in batches until golden brown, turning once, for about 5 minutes.
  6. Remove the fritters with a slotted spoon and place them on paper towels to drain. Serve warm.
