Banana Fritters

Instructions
- Mash the bananas using a fork or puree them in a food processor.
- In a medium bowl, mix the mashed bananas with whole wheat flour, all-purpose flour, brown sugar, baking powder, and salt until you achieve a creamy batter.
- Add nutmeg and vanilla extract to the batter and let it rest for 10 minutes.
- Heat about ½ inch of oil in a large skillet over medium-high heat until shimmering but not smoking.
- Scoop the batter and fry in batches until golden brown, turning once, for about 5 minutes.
- Remove the fritters with a slotted spoon and place them on paper towels to drain. Serve warm.
