Plantain Fritters (Klako)

Ingredients

  • 3 large overly ripe plantains or bananas
  • 1 cup rice, oatmeal or whole wheat flour
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 teaspoon minced garlic
  • ½ teaspoon grated fresh ginger
  • 2 tablespoons finely chopped onions
  • 2 tablespoons finely chopped green onion
  • 1 tablespoon chopped parsley
  • ½ - 1 teaspoon cayenne pepper or pepper sauce

Instructions

  1. If using rice, grind it in a coffee grinder until finely ground or use any flour.
  2. Mash the plantains until pureed or blend in a food processor.
  3. In a medium bowl, combine the ground rice, baking powder, salt, garlic, ginger, and cayenne pepper with the mashed plantains.
  4. Stir in the green onions, onions, and parsley until fully combined.
  5. Adjust seasonings to taste.
  6. Roll about a tablespoon of the mixture into small balls using your hands or a spoon.
  7. Heat oil to 350°F in a skillet or saucepan.
  8. Carefully place spoonfuls of the batter into the hot oil and fry for 3-4 minutes until golden brown.
  9. Remove from the pan with a slotted spoon and drain on paper towels.
