Plantain Fritters (Klako)

overly ripe plantains or bananas

rice, oatmeal or whole wheat flour

grated fresh ginger

cayenne pepper or pepper sauce
Instructions
- If using rice, grind it in a coffee grinder until finely ground or use any flour.
- Mash the plantains until pureed or blend in a food processor.
- In a medium bowl, combine the ground rice, baking powder, salt, garlic, ginger, and cayenne pepper with the mashed plantains.
- Stir in the green onions, onions, and parsley until fully combined.
- Adjust seasonings to taste.
- Roll about a tablespoon of the mixture into small balls using your hands or a spoon.
- Heat oil to 350°F in a skillet or saucepan.
- Carefully place spoonfuls of the batter into the hot oil and fry for 3-4 minutes until golden brown.
- Remove from the pan with a slotted spoon and drain on paper towels.
