Instructions
- Cut the peeled plantains and blend until pureed.
- Add the remaining ingredients to the blender and mix until well combined.
- Let the batter rest in the refrigerator for at least 30 minutes or overnight.
- Heat a skillet and coat it lightly with oil or butter.
- Pour about ½ cup of batter into the skillet and cook until the bottom is light brown, about 1 minute per side.
- Serve hot with toppings like coconut sauce, cinnamon sugar, or syrup.
