Ingredients

  • 2 medium overly ripe plantains
  • 1 cup puree
  • 1 ½ cups flour
  • cup milk
  • ¾ cup water
  • ¼ cup sugar
  • 5 large eggs
  • cup melted butter
  • 1 teaspoon vanilla extract
  • ½ - 1 teaspoon nutmeg
  • ½ cup oil

Instructions

  1. Cut the peeled plantains and blend until pureed.
  2. Add the remaining ingredients to the blender and mix until well combined.
  3. Let the batter rest in the refrigerator for at least 30 minutes or overnight.
  4. Heat a skillet and coat it lightly with oil or butter.
  5. Pour about ½ cup of batter into the skillet and cook until the bottom is light brown, about 1 minute per side.
  6. Serve hot with toppings like coconut sauce, cinnamon sugar, or syrup.
