Ingredients

The latkes

  • 2 pounds russet potatoes, peeled
  • 1 large onion, peeled and halved
  • 2 large eggs
  • 3 tablespoons all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup vegetable oil, for frying

For serving

  • to taste fresh chives, minced
  • to taste applesauce
  • to taste sour cream

Instructions

  1. Preheat the oven to 300°F and prepare a plate with paper towels.
  2. Shred the potatoes and onions using a food processor or box grater, then squeeze to remove excess moisture.
  3. Combine the shredded potatoes and onions in a bowl with eggs, flour, baking powder, salt, and pepper.
  4. Heat oil in a skillet to 325°F and drop spoonfuls of the mixture into the oil, flattening them slightly.
  5. Fry until golden brown on one side, then flip and cook the other side until golden.
  6. Drain on paper towels and keep warm in the oven until all latkes are cooked.
  7. Serve garnished with chives alongside applesauce and sour cream.
