Instructions
- Preheat the oven to 300°F and prepare a plate with paper towels.
- Shred the potatoes and onions using a food processor or box grater, then squeeze to remove excess moisture.
- Combine the shredded potatoes and onions in a bowl with eggs, flour, baking powder, salt, and pepper.
- Heat oil in a skillet to 325°F and drop spoonfuls of the mixture into the oil, flattening them slightly.
- Fry until golden brown on one side, then flip and cook the other side until golden.
- Drain on paper towels and keep warm in the oven until all latkes are cooked.
- Serve garnished with chives alongside applesauce and sour cream.
