Salmon Patties

Ingredients

  • 1 can wild salmon (7-8 ounces), drained
  • 1 large egg
  • 1 tablespoon mayo
  • 1 teaspoon lemon juice
  • ½ teaspoon garlic powder
  • ¼ cup panko (or toasted bread crumbs)
  • 1–2 tablespoons scallions, sliced
  • 1 pinch salt
  • 1 pinch pepper
  • 1–2 tablespoons olive oil

Instructions

  1. Drain the salmon well.
  2. Mix all ingredients together in a medium bowl using a fork and let stand for 5-10 minutes.
  3. If the mixture seems wet, add more panko up to ⅓ cup total.
  4. Divide the mixture into 2 larger patties, pressing them together with your hands.
  5. If desired, dredge the patties in more panko or sesame seeds.
  6. Heat olive oil or butter in a skillet over medium heat.
  7. Sear the salmon cakes for 4-5 minutes on each side until golden and slightly puffed.
  8. Serve with suggested sides or a salad.
