Simple Salmon Patties

Ingredients

  • 1 lb. cooked salmon, chilled and flaked
  • 1 cup panko breadcrumbs
  • 1 each red bell pepper, finely diced
  • ½ small white onion, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • teaspoon smoked paprika
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 1 teaspoon tabasco sauce
  • 3 tablespoons olive oil, divided

Instructions

  1. Remove the skin from the salmon and flake it into a large bowl.
  2. Add breadcrumbs, bell pepper, onion, parsley, chili powder, garlic powder, salt, paprika, egg, mayo, tabasco, and 1 tablespoon of olive oil to the bowl.
  3. Mix all ingredients until they stick together to form a ball.
  4. Use a 1/3 cup scoop to form 10-12 balls from the mixture, then flatten them into patties.
  5. Heat a skillet over medium/high heat and add 1 tablespoon of olive oil.
  6. Cook the patties for 2-3 minutes on each side until browned, adding more olive oil as needed.
  7. Serve and enjoy as desired.
