Old-Fashioned Salmon Patties

Instructions
- Chop the salmon finely and set aside.
- Sauté onions, celery, and garlic in oil until fragrant, then cool.
- Mix salmon, onion mixture, eggs, Cajun seasoning, ¼ cup bread crumbs, white pepper, cayenne, salt, red pepper, and parsley in a bowl. Refrigerate for at least an hour.
- Form the mixture into 6-8 patties, about 1-inch thick.
- Dredge patties in additional breadcrumbs if desired.
- Heat oil in a frying pan and fry patties until golden, about 3-4 minutes per side.
- Transfer to a paper towel-lined plate and serve warm.
