Old-Fashioned Salmon Patties

Ingredients

  • pound salmon fillet (or a 15-ounce can)
  • ½ cup diced onion
  • 2-3 tablespoons minced celery
  • 1 teaspoon minced garlic
  • 2 large eggs, lightly beaten
  • 1 teaspoon Cajun seasoning
  • ¾ cup bread crumbs (divided)
  • 1 teaspoon white pepper
  • pinch cayenne (optional)
  • ¾ teaspoon salt (adjust to taste)
  • 2 tablespoons finely minced red pepper
  • 2 tablespoons minced parsley

Instructions

  1. Chop the salmon finely and set aside.
  2. Sauté onions, celery, and garlic in oil until fragrant, then cool.
  3. Mix salmon, onion mixture, eggs, Cajun seasoning, ¼ cup bread crumbs, white pepper, cayenne, salt, red pepper, and parsley in a bowl. Refrigerate for at least an hour.
  4. Form the mixture into 6-8 patties, about 1-inch thick.
  5. Dredge patties in additional breadcrumbs if desired.
  6. Heat oil in a frying pan and fry patties until golden, about 3-4 minutes per side.
  7. Transfer to a paper towel-lined plate and serve warm.
