Ingredients

The base

  • 1 cup gluten-free flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • cup melted coconut oil
  • ½ cup pure maple syrup
  • 1 small ripe banana, mashed
  • 1 tsp vanilla extract

The mix-ins

  • 2 cups rolled oats
  • ¾ cup unsweetened shredded coconut
  • 1 cup diced walnuts or other nuts/seeds
  • 8 oz finely chopped fresh strawberries (about 1 1/4 cups)

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 inch pan.
  2. In a small bowl, combine the gluten-free flour, baking powder, and salt.
  3. In a large bowl, mix the egg, melted coconut oil, maple syrup, mashed banana, and vanilla extract.
  4. Stir in the flour mixture until combined.
  5. Add the rolled oats, shredded coconut, and walnuts, and stir to combine.
  6. Gently fold in the chopped strawberries.
  7. Press the mixture evenly into the prepared pan.
  8. Bake for 20 to 25 minutes until the edges are brown.
  9. Allow to cool completely on a wire rack before cutting into bars.
