Instructions
- Preheat the oven to 350°F and grease a 9x13 inch pan.
- In a small bowl, combine the gluten-free flour, baking powder, and salt.
- In a large bowl, mix the egg, melted coconut oil, maple syrup, mashed banana, and vanilla extract.
- Stir in the flour mixture until combined.
- Add the rolled oats, shredded coconut, and walnuts, and stir to combine.
- Gently fold in the chopped strawberries.
- Press the mixture evenly into the prepared pan.
- Bake for 20 to 25 minutes until the edges are brown.
- Allow to cool completely on a wire rack before cutting into bars.
