Instructions
- 1. Season the cubed chuck roast with salt and pepper on all sides.
- 2. Heat the avocado oil in a dutch oven over medium-high heat.
- 3. Sear the seasoned beef in batches for 2 to 3 minutes per side until browned, then transfer to a bowl.
- 4. Add more oil if needed, then cook the mushrooms until golden brown.
- 5. Add the onions, celery, and carrots to the mushrooms and cook for 4 to 5 minutes.
- 6. Stir in the minced garlic and cook for 1 minute until fragrant.
- 7. Add the tomato paste, beef broth, thyme, and rosemary, and return the beef to the pot.
- 8. Bring the mixture to a boil, then reduce the heat and simmer uncovered for 1 hour until the beef is tender.
- 9. Serve warm, either on its own or with mashed cauliflower.
