Ingredients

  • 2 pounds boneless, skinless chuck roast, cubed
  • to taste salt
  • to taste pepper
  • 2 tablespoons avocado oil or other neutral oil
  • 8 ounces baby bella mushrooms, quartered
  • 2 stalks celery, sliced
  • 1 small onion, sliced
  • 4 cloves garlic, minced
  • 2 carrots sliced
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped

Instructions

  1. 1. Season the cubed chuck roast with salt and pepper on all sides.
  2. 2. Heat the avocado oil in a dutch oven over medium-high heat.
  3. 3. Sear the seasoned beef in batches for 2 to 3 minutes per side until browned, then transfer to a bowl.
  4. 4. Add more oil if needed, then cook the mushrooms until golden brown.
  5. 5. Add the onions, celery, and carrots to the mushrooms and cook for 4 to 5 minutes.
  6. 6. Stir in the minced garlic and cook for 1 minute until fragrant.
  7. 7. Add the tomato paste, beef broth, thyme, and rosemary, and return the beef to the pot.
  8. 8. Bring the mixture to a boil, then reduce the heat and simmer uncovered for 1 hour until the beef is tender.
  9. 9. Serve warm, either on its own or with mashed cauliflower.
