Instructions
- Season the beef with salt and pepper.
- Heat oil in a large dutch oven and sear the beef until browned, then set aside.
- In the same pot, sauté onions and carrots until soft and lightly browned.
- Add garlic and Italian seasoning, and sauté until fragrant.
- Return beef to the pot, add broth, diced tomatoes, and bay leaves, then bring to a boil.
- Reduce heat and simmer until beef is tender.
- Add celery root and simmer until tender.
- Remove bay leaves and adjust seasoning if necessary.
