Instructions
- Preheat the oven to 170C/325F.
- Season the beef with salt and pepper, then dust with coconut or almond flour.
- Heat olive oil in a large Dutch oven over medium heat and brown the beef on all sides.
- Remove the beef and set it aside.
- Add garlic, onion, carrots, and jicama to the pot and cook until fragrant.
- Add beef broth, tomato paste, and Worcestershire sauce, bringing to a boil.
- Return the beef to the pot, add the bay leaf, and cover.
- Transfer the pot to the oven and cook for 1½ to 2 hours until the beef is tender.
- Remove the bay leaf and serve immediately.
