Ingredients

The beef

  • 2 lbs beef chuck roast cut into 2-inch chunks
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons coconut flour or almond flour
  • 2 tablespoons olive oil

The vegetables

  • ½ large onion chopped
  • 4 cloves garlic minced
  • 1 large carrot chopped into large chunks
  • 2 medium jicama diced into 2-inch pieces

The broth and seasoning

  • 2 cups beef broth
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf bay leaf

Instructions

  1. Preheat the oven to 170C/325F.
  2. Season the beef with salt and pepper, then dust with coconut or almond flour.
  3. Heat olive oil in a large Dutch oven over medium heat and brown the beef on all sides.
  4. Remove the beef and set it aside.
  5. Add garlic, onion, carrots, and jicama to the pot and cook until fragrant.
  6. Add beef broth, tomato paste, and Worcestershire sauce, bringing to a boil.
  7. Return the beef to the pot, add the bay leaf, and cover.
  8. Transfer the pot to the oven and cook for 1½ to 2 hours until the beef is tender.
  9. Remove the bay leaf and serve immediately.
