Keto Beef Stew

Instructions
- Prepare the beef chuck roast and season with salt and pepper.
- Prep the radishes and celery.
- Mix beef broth and tomato paste together in a bowl.
- Heat a large pot or Dutch oven over medium heat and add 1 tbsp of ghee.
- Brown the beef cubes in batches for about 2 minutes per side, then remove from the pot.
- Add another tbsp of ghee, then add radishes, celery, and Italian seasoning, cooking for 3 minutes.
- Pour in the broth mixture and scrape the bottom of the pot.
- Add the beef back in, bring to a boil, then reduce to a simmer for 30 minutes.
- Remove some broth, mix with arrowroot starch, then add back into the pot with mushrooms.
- Simmer for another 10 minutes until the beef is tender.
