Keto Beef Stew

Ingredients

  • 2 lbs beef chuck roast, cut into 1 inch cubes
  • 1 tsp sea salt
  • 1 tsp pepper
  • 2 tbsp ghee, divided
  • 1 lb radishes, trimmed and cut in half
  • 6 ribs celery, sliced into small pieces
  • 8 oz mushrooms, halved
  • 6 cups beef broth
  • 1 tbsp tomato paste
  • 1 tbsp arrowroot starch
  • 1 tbsp Italian seasoning

Instructions

  1. Prepare the beef chuck roast and season with salt and pepper.
  2. Prep the radishes and celery.
  3. Mix beef broth and tomato paste together in a bowl.
  4. Heat a large pot or Dutch oven over medium heat and add 1 tbsp of ghee.
  5. Brown the beef cubes in batches for about 2 minutes per side, then remove from the pot.
  6. Add another tbsp of ghee, then add radishes, celery, and Italian seasoning, cooking for 3 minutes.
  7. Pour in the broth mixture and scrape the bottom of the pot.
  8. Add the beef back in, bring to a boil, then reduce to a simmer for 30 minutes.
  9. Remove some broth, mix with arrowroot starch, then add back into the pot with mushrooms.
  10. Simmer for another 10 minutes until the beef is tender.
