Smashed Cucumber Salad

Ingredients

The salad

  • 1 pound seedless cucumbers
  • 2 medium carrots
  • 2 green onions thinly sliced
  • 2 teaspoons toasted sesame seeds

The seasoning

  • 1 teaspoon Diamond Crystal kosher salt
  • ¼ cup All-Purpose Stir-Fry Sauce
  • 1 clove garlic
  • ½ teaspoon toasted sesame oil
  • ¼ teaspoon crushed red chile pepper

Instructions

  1. Smash the cucumbers on a cutting board until they split open.
  2. Trim the ends and cut the cucumbers into bite-size pieces.
  3. Place the cucumber pieces in a colander and toss with kosher salt, then refrigerate.
  4. In a bowl, whisk together the All-Purpose Stir-Fry Sauce, minced garlic, sesame oil, and crushed red chile pepper.
  5. Combine the drained cucumbers with the carrot noodles and most of the green onions.
  6. Add the dressing and toss well.
  7. Transfer to a serving bowl and top with the remaining green onions and toasted sesame seeds.
  8. Serve immediately.
