Smashed Cucumber Salad

The seasoning

Diamond Crystal kosher salt

All-Purpose Stir-Fry Sauce

garlic

toasted sesame oil

teaspoon
crushed red chile pepper
Instructions
- Smash the cucumbers on a cutting board until they split open.
- Trim the ends and cut the cucumbers into bite-size pieces.
- Place the cucumber pieces in a colander and toss with kosher salt, then refrigerate.
- In a bowl, whisk together the All-Purpose Stir-Fry Sauce, minced garlic, sesame oil, and crushed red chile pepper.
- Combine the drained cucumbers with the carrot noodles and most of the green onions.
- Add the dressing and toss well.
- Transfer to a serving bowl and top with the remaining green onions and toasted sesame seeds.
- Serve immediately.
