Ingredients

The salad

  • 3 pieces fresh Persian cucumbers
  • 2 cloves garlic, minced
  • 1 stalk scallion, chopped
  • 2 pieces red Thai pepper, chopped
  • 3 stalks cilantro, chopped

The dressing

  • 3 teaspoons low-sodium soy sauce
  • 5 tablespoons Chinese black vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon spicy chili crisp or chili oil
  • 1 tablespoon sesame oil
  • ½ tablespoon roasted sesame seeds
  • to taste salt

Instructions

  1. Wash and slice off the ends of the cucumbers, then smash them gently and cut into ½-inch pieces.
  2. Prepare the dressing by mixing soy sauce, black vinegar, sugar, chili crisp, sesame oil, sesame seeds, and salt in a bowl until dissolved.
  3. Combine the smashed cucumbers with minced garlic, scallions, red Thai pepper, and cilantro in a large bowl.
  4. Toss the cucumber mixture with the dressing and serve immediately.
