Cucumber Salad

Ingredients

  • 2 large English Cucumbers
  • 1/4 of a red onion
  • 1 clove garlic
  • 3 tablespoons fresh lemon or lime juice
  • 1/2 cup chopped cilantro, dill, mint, basil or parsley
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground coriander or ground cumin (optional)
  • 1/2 teaspoon chili flakes (optional)
  • 1 optional jalapeno

Instructions

  1. Marinate red onion in citrus juice in a bowl.
  2. Slice cucumbers, mince garlic, and chop herbs; add to the bowl.
  3. Add olive oil, salt, and any optional spices to the bowl.
  4. Toss everything well and adjust seasoning to taste.
