Instructions
- 1. Place sliced cucumbers in a colander, sprinkle with salt, and toss to coat evenly. Let drain in the refrigerator for 30 to 60 minutes.
- 2. In a mixing bowl, whisk together apple cider vinegar, olive oil, mayonnaise, honey, parsley, dill, garlic, and pepper until well blended. Chill until ready to use.
- 3. Rinse the red onion under cool water and drain.
- 4. Spread cucumbers on paper towels, cover with another layer, and press to remove excess liquid.
- 5. In a large bowl, combine cucumbers and red onion, whisk the dressing again, pour it over the salad, and toss to coat. Serve within one hour.
