Instructions
- Thinly slice the cucumbers by hand or with a mandoline.
- Place cucumber slices, red onion slices, and dill in a large bowl.
- In a small bowl, mix together the vinegar, honey, sea salt, and pepper.
- Pour the dressing over the vegetables and toss until evenly coated.
- Cover and refrigerate for at least 1 hour before serving.
