Smashed Cucumber Salad

Ingredients

The salad

  • 3 medium English cucumbers
  • 2 tbsp Toasted sesame seeds
  • ¼ cup Fresh cilantro (chopped)

The dressing

  • 3 tbsp Rice vinegar
  • 1 tbsp Olive oil
  • 1 tbsp Coconut aminos
  • 1 tsp Honey
  • 1 tsp Toasted sesame oil
  • 1 tsp Sea salt
  • ½ tsp Black pepper
  • ½ tsp Garlic powder
  • ½ tsp Sriracha

Instructions

  1. Cut cucumbers in half lengthwise and place them skin side up on a cutting board.
  2. Pound the cucumbers gently with a rolling pin or flat object until they crack.
  3. Slice the smashed cucumbers into bite-sized pieces and place them in a large bowl.
  4. Add toasted sesame seeds and chopped cilantro to the bowl.
  5. In a small bowl, whisk together all dressing ingredients.
  6. Pour the dressing over the salad and mix gently.
  7. Let the salad chill for 30 minutes if desired, then serve cold.
