Instructions
- Cut cucumbers in half lengthwise and place them skin side up on a cutting board.
- Pound the cucumbers gently with a rolling pin or flat object until they crack.
- Slice the smashed cucumbers into bite-sized pieces and place them in a large bowl.
- Add toasted sesame seeds and chopped cilantro to the bowl.
- In a small bowl, whisk together all dressing ingredients.
- Pour the dressing over the salad and mix gently.
- Let the salad chill for 30 minutes if desired, then serve cold.
