Instructions
- 1. Finely slice the cucumber and red onion; peeling the cucumber is optional.
- 2. Add the cucumber and red onion to a salad bowl along with the chopped peanuts.
- 3. Prepare the dressing by whisking together the fish sauce, honey, rice vinegar, toasted sesame oil, and lime juice. Adjust seasonings to taste.
- 4. Pour the dressing over the cucumber, onion, and peanuts.
- 5. Chop the avocado into small pieces and add it to the bowl.
- 6. Toss to combine, and top with additional peanuts and/or sesame seeds.
