Classic Beef Stroganoff

Ingredients

  • 4 tablespoons butter
  • 1 medium onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 8 ounces mushrooms (chopped)
  • ¼ cup whole-wheat flour
  • 1 pound sirloin steak
  • cups beef broth
  • ½ cup sour cream
  • 1 teaspoon dijon mustard
  • to taste salt
  • to taste pepper
  • for serving whole-wheat egg noodles
  • optional fresh parsley (for garnish)

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add onion, garlic, and mushrooms; cook for 2-3 minutes while stirring.
  3. Cut steak into 1½ inch chunks, season with salt and pepper, and coat with flour.
  4. Add steak and remaining flour to the skillet; brown the meat for 1-2 minutes.
  5. Pour in beef broth and bring to a boil, scraping the brown bits from the pan.
  6. Lower heat to a simmer, cover, and cook for 5-10 minutes until meat is cooked and sauce thickens.
  7. Remove lid, stir in salt, sour cream, mustard, and pepper; simmer for another minute.
  8. Serve warm over cooked egg noodles and garnish with parsley if desired.
