Ingredients

The sauce

  • 2 tablespoons butter
  • 8 ounces button mushrooms, sliced
  • ¼ cup diced onions
  • 2 cloves garlic, crushed
  • 1 pound top sirloin, sliced
  • 2 tablespoons all-purpose flour
  • 1 can beef consommé (10.5 ounces)
  • 3 tablespoons dry sherry
  • 1 tablespoon lemon juice
  • ¼ teaspoon pepper
  • Salt
  • 1 cup sour cream

The noodles

  • 8 ounces egg noodles

Instructions

  1. Melt butter in a large skillet over medium heat and cook mushrooms, onions, and garlic until tender.
  2. Increase heat to medium-high, add sliced sirloin, and cook until browned.
  3. Stir in flour, then add consommé, sherry, lemon juice, and pepper, mixing well.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  5. While the sauce simmers, cook egg noodles in a salted pot of boiling water according to package instructions, then drain.
  6. Temper the sour cream by mixing it with a small amount of the hot cooking liquid, then stir it into the beef mixture.
  7. Add salt to taste and serve the stroganoff over the cooked egg noodles.
