Ingredients

The beef and seasoning

  • pound beef sirloin steak
  • to taste salt
  • to taste pepper

The cooking fats

  • 1 tablespoon oil
  • 2 tablespoons unsalted butter

The vegetables

  • 8 ounces mushrooms
  • 1 cup onion, diced
  • 1 tablespoon garlic, minced
  • 1 teaspoon fresh thyme
  • 1 bay leaf

The sauce ingredients

  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon Dijon mustard
  • ½-¾ cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the steak by washing, patting dry, and pounding to ⅓ inch thick, then slice into strips and season with salt and pepper.
  2. Heat oil in a skillet over medium-high heat and fry the beef strips until browned, about 3-5 minutes, then set aside.
  3. In the same skillet, melt butter and sauté mushrooms until golden brown, then set aside.
  4. Add remaining butter to the skillet, then cook onions, garlic, thyme, and bay leaf until onions are translucent.
  5. Sprinkle in flour and cook for a minute, then whisk in beef broth gradually, scraping the pan to deglaze.
  6. Bring to a boil and simmer until thickened, about 3-5 minutes.
  7. Stir in Worcestershire sauce, paprika, Dijon mustard, and sour cream until well combined.
  8. Return the mushrooms and beef to the skillet, simmer for another 2-3 minutes.
  9. Garnish with parsley and serve with pasta, mashed potatoes, or rice.
