Beef Stroganoff

Ingredients

The beef and mushrooms

  • pounds sirloin steak tips
  • 1 pound white mushrooms

The sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon dried mustard
  • 2 teaspoons hot water
  • 1 teaspoon granulated sugar
  • 1 tablespoon olive oil
  • 1 medium onion
  • 4 teaspoons all-purpose flour
  • 2 teaspoons tomato paste
  • 2 cups beef broth
  • ½ cup sour cream

For serving

  • 1 pound egg noodles
  • 1 tablespoon chopped fresh chives or dill

Instructions

  1. Marinate the steak in soy sauce for 15 minutes at room temperature or up to 1 hour in the refrigerator.
  2. Microwave the mushrooms until they reduce in volume and drain any liquid.
  3. Make a mustard paste by mixing mustard, hot water, and sugar.
  4. Pat the steak dry, season with salt, and cook in a hot skillet until browned.
  5. Remove the steak and cook the mushrooms and onion in the same skillet until browned.
  6. Add flour and tomato paste to the vegetables and cook for a minute.
  7. Stir in beef broth and the mustard paste, then simmer until the sauce thickens.
  8. Slice the steak and return it to the sauce to warm through.
  9. Remove from heat, stir in sour cream, and season with salt and pepper.
  10. Serve over buttered egg noodles and garnish with chives if desired.
