Instructions
- Marinate the steak in soy sauce for 15 minutes at room temperature or up to 1 hour in the refrigerator.
- Microwave the mushrooms until they reduce in volume and drain any liquid.
- Make a mustard paste by mixing mustard, hot water, and sugar.
- Pat the steak dry, season with salt, and cook in a hot skillet until browned.
- Remove the steak and cook the mushrooms and onion in the same skillet until browned.
- Add flour and tomato paste to the vegetables and cook for a minute.
- Stir in beef broth and the mustard paste, then simmer until the sauce thickens.
- Slice the steak and return it to the sauce to warm through.
- Remove from heat, stir in sour cream, and season with salt and pepper.
- Serve over buttered egg noodles and garnish with chives if desired.
