Ingredients

The brownie mixture

  • cup coconut oil, melted
  • cups sugar
  • ¾ cup Dutch-process Cocoa Powder
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 2 large eggs
  • ½ cup all-purpose flour
  • cup chopped walnuts

The raspberry swirl

  • cup raspberry jam with preserves

Instructions

  1. Preheat the oven to 325°F and grease an 8x8 pan.
  2. Combine melted coconut oil, sugar, cocoa powder, and salt until smooth.
  3. Stir in vanilla extract and add eggs one at a time.
  4. Mix in flour until just combined, then fold in walnuts.
  5. Spread the brownie mixture evenly in the prepared pan.
  6. Heat raspberry jam in a saucepan until smooth, then pour over the brownie mixture.
  7. Bake for 20-25 minutes or until a toothpick comes out slightly moist.
  8. Let cool completely before serving.
