Sautéed Beet Greens

Ingredients

The greens

  • 1 bunch beet greens

The sauté

  • 1 teaspoon extra-virgin olive oil
  • 1 clove garlic, finely chopped
  • to taste sea salt
  • to taste freshly ground black pepper
  • 2 tablespoons golden raisins
  • 1 wedge lemon, for squeezing
  • 1 tablespoon chopped walnuts or pistachios

Instructions

  1. Separate the stems from the beet greens and chop the stems finely while tearing or chopping the leaves into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat, add garlic and chopped stems, and cook for 1 minute.
  3. Add the beet greens, season with salt and pepper, and sauté until wilted.
  4. Turn off the heat, add the raisins, and squeeze with lemon juice, then toss to combine.
  5. Transfer to a platter, top with walnuts, and adjust seasoning if necessary.
