Sautéed Beet Greens

Instructions
- Separate the stems from the beet greens and chop the stems finely while tearing or chopping the leaves into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat, add garlic and chopped stems, and cook for 1 minute.
- Add the beet greens, season with salt and pepper, and sauté until wilted.
- Turn off the heat, add the raisins, and squeeze with lemon juice, then toss to combine.
- Transfer to a platter, top with walnuts, and adjust seasoning if necessary.
